Egyptian Recipe for Basic Tomato Sauce

This is a basic recipe for a Tomato Sauce that’s used in many other recipes such as Moussaka.

It’s simple quick and delicious!

Serving Size: Yields 2 cups of tomato sauce

Ingredients:
2 Tbs oil or 1 Tbs oil + 1 Tbs butter / ghee
3 cloves of garlic, minced
2 Tbs tomato paste
2 cups of water
1/2 tsp salt
1/4 tsp pepper

Directions:

~ Over medium high heat, preheat the oil in a saucepan.
~ Add the garlic and stir fry until the garlic turn dark yellow.
~ Add the tomato paste and mix well for 2 minutes and until the tomato paste separates from the oil.
~ Add the water, salt and pepper.  Mix well and bring to a boil.
~ Lower the heat, cover the saucepan and let the sauce simmer for about 10 minutes.
~ The sauce is now ready to be used in any recipe calling for it.
